Bowl of mayonnaise made with macadamia and walnut oil


  • 200ml macadamia oil
  • 1 tbsp walnut Oil
  • 1 egg
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ tsp salt
  • ½ tsp pepper


  1. Layer up your ingredients in your container by putting the whole egg first.
  2. Add 1 teaspoon of Dijon mustard.
  3. Next add the oil gently on top so it creates a protective layer above the oil before adding the acids.
  4. Add the lemon juice.
  5. Add salt and pepper.
  6. Gently cup the end of the stick blender on top of the egg and blend.

  • Your container should not be a lot wider in diameter than your blender head.
  • You can also use a countertop blender. Put all ingredients in the same order, then blend.
  • Add dill or roasted garlic or other flavourings if desired.
