Ingredients
- 200ml macadamia oil
- 1 tbsp walnut Oil
- 1 egg
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- ½ tsp salt
- ½ tsp pepper
Method
- Layer up your ingredients in your container by putting the whole egg first.
- Add 1 teaspoon of Dijon mustard.
- Next add the oil gently on top so it creates a protective layer above the oil before adding the acids.
- Add the lemon juice.
- Add salt and pepper.
- Gently cup the end of the stick blender on top of the egg and blend.

Tips
- Your container should not be a lot wider in diameter than your blender head.
- You can also use a countertop blender. Put all ingredients in the same order, then blend.
- Add dill or roasted garlic or other flavourings if desired.
